Home made avocado and walnut pesto with gluten free penne and roasted vegetables 👏 recipe up tonight ☺️
Sesame zucchini and carrot patties with chilli and lime yoghurt 😍 Grate 2 carrots and 2 zucchinis (press the liquid from the grated zucchini out between paper towel). Add to this mixture 3 whisked eggs, 1/4 cup almond me, 1/4 cup flaxseed meal, 3 crushed garlic cloves, 4 tbs sesame seeds, 1 1/2 tsp cumin powder and a big sprinkling of Himalayan punk salt and freshly cracked pepper. Stir until well combined then dollop large scoops of the mixture onto a pan preheated with a tbs coconut oil. I let mine cook for about 3 minutes on each side but they are done once golden and crispy ☺️ one removed from the pan I layered them on fresh rocket and topped it off with sliced avocado and natural yoghurt mixed with fresh lime juice and chilli flakes.... Yum!! 👏
Pink Pitaya Fruit Cup 😍 @pinkpitaya I was lucky enough to try some of this delicious pitaya from the lovely guys at @pinkpitaya it's just landed in Australia, is a significant source of antioxidants, high in vitamin c, low carb, is a natural detoxing agent and the edible seeds even contain protein an omega-3's... What a super fruit! ☺ I blended mine with banana and coconut water but if you're on the sunny Gold Coast you can be the first to try @pinkpitaya in a yummy smoothie or bowl from @little_mali or @nookieonthewestside yum!

Coconut, apple and macadamia roll 😍 this was delish!! In a food processor simply blend: 3 cups of pitted dates 1 cup macadamia nuts 1 1/2 cups shredded coconut 1/2 cup chia seeds 1/2 cup unsweetened dried apple 1 1/2 tbs coconut oil 1/2 tsp vanilla Blend on high speed for about 3 minutes until the mixture turns into a dough. Pop it onto a bread board covered in more coconut and roll out into a log. Tightly wrap in plastic wrap and leave to set overnight in the fridge (do not skip this step... It completely changes the texture ☺️). The next morning slice and enjoy! Goes perfectly with a cuppa ☕️❤️
Baked eggplant "pizzas" bocconcini, roasted tomatoes and fresh basil // ricotta, shaved asparagus and chilli 😍 Bake 2 thick slices of eggplant for 10-15 minutes. Remove and top with 2 tbs organic tomato paste mixed with 1 clove freshly crushed garlic and a pinch if Himalayan pink salt. I topped one with fresh ricotta, shaved asparagus (I did this simply with a vegetable peeler) and dried chilli flakes. The other one I topped with sliced bocconcini and halved cherry tomatoes. Bake at 200 degrees Celsius for about 10 minutes then I topped with fresh basil and cracked pepper. Yum! ☺️
quinoa, black bean and kale burritos with coriander yoghurt ☺ in a frypan sauté one chopped red onion and 3 cloves of garlic in 2 tbs coconut oil. Add 1 chopped yellow capsicum, 3 chopped tomatoes, 1 can of rinsed organic black beans and 1 cup of cooked quinoa. season with 1/2 tsp cumin, 1/2 tsp coriander and 1/2 tsp turmeric. I served mine in organic white corn tortillas I found at the health food store. top with chopped avocado and chopped fresh coriander stirred through natural yoghurt. yum!

Warm coconut and strawberry spelt breakfast loaf 😍 good morning! ☺️🍓 In a large bowl combine: 2 cups of spelt flour 1 1/4 cups desiccated coconut A big pinch of Himalayan pink salt 1 1/2 cups fresh strawberries chopped in half 2 tsp baking powder 1 tsp cinnamon 1/2 tsp baking soda In a desperate bowl combine: 2 very ripe mashed bananas (they must be starting to get black spots ☺️) 3/4 cup natural yoghurt 1/4 cup melted coconut oil 2 tbs maple syrup Now mix the two bowls together until well combined and pop into a loaf pan greased with coconut oil. I topped mine with shredded coconut before cooking it 👏 place into an oven pre heated to 175 degrees Celsius and bake for 1 hour. Use a skewer to check if the inside is cooked... It may need a further 5 minutes. This is a bread, not a cake, toast it under the grill and add butter, yoghurt or your topping of choice, yum 😊

Vanilla banana ice cream with warm, creamy salted caramel sauce 😍 2 frozen bananas blended with a dash of vanilla and a pinch if cinnamon for the ice cream and for the most delicious sauce ever: 1/2 cup pitted dates 1 tbs flax meal 1/4 tsp Himalayan pink salt Dash of maple syrup and about 1/4 cup water Blend all ingredients in a food processor until super smooth (the flax meal thickens it up so you may need to add more or less water depending in how thick you want it ☺️) Once blended I just heated it in a mini saucepan on the stove. I layered them into a glass with crushed nuts, cacao nibs and more cinnamon.... This is too good for breakfast! 🙈
I have perfected my most favourite bread ever! 😍 I present to you spelt banana, raisin, coconut loaf! 🙌 preheat your oven to 175 degrees celsius. In a large bowl mix together: 2 cups spelt flour 3/4 cup dedicated coconut Big punch of Himalayan salt 2 tsp baking powder 1/2 tsp baking soda 1/2 cup raisins 1/2 tsp cinnamon In a smaller bowl stir together: 2 large VERY RIPE mashed bananas.... It is do important for the flavour/texture that they have brown spots... Plus this is when they are at their healthiest ☺ 3/4 cup natural yoghurt 1/4 cup melted coconut oil Now mix the two bowls together... Gently. Pour into a loaf pan grazed with more coconut oil and top with a sliced banana. Cook for 50 minutes or until a skewer can be pulled out clean.... Yummmm ❤

I added more dry or wet ingredients as needed ☺ mix together: 2 1/2 cups rolled oats 1/2 cup black chia seeds 1/2 cup flaxseed meal Pinch of Himalayan pink salt 1/2 cup dedicated coconut in another bowl mix together: 1 cup organic peanut butter 2/3 cup honey 3 tbs coconut oil Combine both bowls together and roll bills in dedicated coconut before refrigerating overnight. These kind of taste like cookie dough 😊

Warm sweet potato crisps with white bean, dill and cumin dip 😍 The chips are simply super thin sliced sweet potato with a tiny drizzle if coconut oil and a sprinkling of Himalayan pink salt, baked until slightly browned. And for the delicious dip: 1 can of organic butter bean drained 3 cloves of freshly roasted garlic 4 tbs virgin olive oil 1 tsp ground cumin Cracked pepper and Himalayan pink salt to taste The juice from one lemon Blend all the above on high speed in a food processor until smooth and creamy. Then top with fresh dill... Yum! 😊
super healthy cacao chip, cinnamon oat cookies 😍 These yummies are vegan, sugar and wheat free ☺ preheat your oven to 180 degrees Celsius. In a large bowl mix together: 3 mashed ripe bananas 1/4 cup melted coconut oil 1/2 tsp organic vanilla Then add: 2 cups rolled oats 1 cup almond meal 1/2 cup unsweetened shredded coconut 1 tsp cinnamon 1/4 tsp Himalayan pink salt 1 tsp baking powder 1/3 cup @loving_earth cacao nibs Drop balls of the mixture onto a baking tray lined with baking paper... the balls should be about 2 1/2 tsps big 😊 press down each ball with the back of a spoon then bake for 20 minutes, let cool and enjoy!

Clean Anzac cookies 🍪 lest we forget 🙏 In a large bowl combine: 1 cup rolled oats 1 cup desiccated coconut 1 cup wholemeal spelt flour Pinch if Himalayan pink salt Tbs chia seeds 1/2 cup coconut sugar. In a small saucepan over low heat I melted 1/2 cup @jtscoconutessence coconut oil, 4 tbs raw honey (you could use maple syrup but I like the way the honey sweetens them) 2 tbs water and 1 tsp bi carb soda. Pour the coconut oil mixture into the large bowl and mix until well combined. Roll tablespoons of the mixture into balls and pop onto a tray lined with baking paper. Press down on each ball lightly with a fork to flatten slightly. Bake for about 17 minutes in an oven pre heated at 175 degrees elicits. Cookies will be soft when removed from the oven but will crisp up in the edges once cooled on a wire wrack for at least 15 minutes. Delicious ☺️
Peanut butter cacao chip breakfast bowl with cinnamon maple swirl ☺️ Blend: 2 frozen bananas 1 tbs organic peanut butter 1 tbs @loving_earth cacao nibs 1 tbs flaxseed meal 1 tsp coconut oil 1/4 cup oats 1 tsp maca powder The topping is 1 tbs maple syrup with 1/2 tsp cinnamon and a pinch of Himalayan pink salt ☺️
extra creamy, banana peanut butter superfood smoothie 😍 blend together: 2 frozen bananas 1 1/2 cups unsweetened almond milk 2 tbs black chia seeds 1 tbs maca powder 1 tbs cinnamon 2 tbs buckwheat 1 tbs coconut oil 1 large heaped tbs organic peanut butter 2 tbs flaxseed meal 1 tbs quinoa flakes I topped mine with sliced banana, cinnamon and walnuts, yum!
Coconut, banana and cacao chia seed pudding 😊🍓 Stir together: 1/4 cup chia seeds 1 cup unsweetened almond milk 1 tbs cacao powder 1 tbs desiccated coconut 1 tsp coconut oil A dash of maple syrup to your taste. Leave to set overnight in a sealed container. In the morning stir through 1 very ripe mashed banana and top with yoghurt and berries of your choice... I used coyo and strawberries.... mmm 👏
