Why I'm obsessed with this COCONUT THAI SOUP:   1. When you use ingredients like full-fat coconut milk, you’re boosting your brain power without realizing it. Coconut milk adds a creaminess to the soup that is to die for!  2. Thai cuisine is one of my favorites and the curry makes all of the difference in this dish. Coconut Thai Soup is more than a brothy soup. It’s a hearty and creamy soup that makes you feel warm and fuzzy on the inside!  3. Adding crunchy cashews to the soup before serving gives it the perfect crunch and saltiness you need.  This recipe is also a part of our 7-DAY PLANT-BASED RESET. Thousands of rawkstars have fallen in love with it.   So, stop drooling and make some for yourself!   Coconut Thai Soup / serves four  INGREDIENTS 4 cans (13 ounces each) full-fat coconut milk 4 tablespoons red or green Thai curry paste 2 teaspoons pure maple syrup 1/2 teaspoon sea salt� 1 cup very thinly sliced carrots 1 cup thinly sliced baby bella mushrooms 2 zucchini, spiralized  FOR SERVING 1/2 cup raw cashews, chopped� 1/4 cup sliced scallions� 1 serrano chile pepper, thinly sliced (wear plastic gloves when handling) 1 lime, cut into wedges  INSTRUCTIONS 1. In a large saucepan, whisk together the coconut milk and curry paste. Bring to a simmer over medium heat. Stir in the maple syrup and salt. Add the carrots and mushrooms and simmer for 20 minutes, or until the carrots are tender. Add the zucchini noodles. Taste and add more salt, if needed. �  2.Ladle into serving bowls and garnish with cashews, scallions, chile pepper, and lime wedges. Serve immediately. #plantbased #mealplans  

It’s blueberry season! My favorite thing to do is head out to our local PYO with the kids and stock up for the year. We make blueberry syrup, blueberry pancakes, muffins, really everything we can think of. It’s pretty hard to top a juicy, garden fresh, still-warm-from-the-sun tomato, but this comes pretty close. Creamy avocado stands in for cheese in our version of the classic Italian Caprese Salad. (We don’t think you’ll miss it.) 🍃  Simple Caprese Salad with Avocado / serves one   INGREDIENTS ½ ripe avocado 1 small ripe tomato ¼ cup fresh basil leaves (about 8–10) Sea salt and black pepper Balsamic vinegar, optional Olive oil, optional   INSTRUCTIONS 1. Thickly slice the avocado and tomato. 2. Arrange on a plate along with the basil leaves. 3. Season well with salt and pepper. If desired, drizzle with balsamic vinegar and olive oil. 4. Eat immediately. #plantbased #mealplans

Our plant-based matcha latte can help boost metabolism, burn calories, calm the mind, enhance mood and concentration, and relax the body. Pretty awesome stuff, right? 🍃⠀ ⠀ THE BEST PLANT-BASED MATCHA LATTE / serves one⠀ ⠀ 1 cup almond milk, unsweetened⠀ 1 1/2 teaspoons matcha powder⠀ 1/4 cup boiling water⠀ 1/2 teaspoon pure vanilla extract, optional⠀ ⠀ 1. Place almond milk into a small saucepan and heat gently until very hot, but not boiling.⠀ 2. Meanwhile, place match powder into a mug and whisk in 1/4 cup boiling water to make a paste.⠀ 3. If using vanilla, stir into the hot almond milk. For a frothy texture, place almond milk in blender and blend for 10-15 seconds on high. Or use the matcha whisk to froth the milk by hand.⠀ 4. Pour the almond milk into the mug with the matcha tea, adding any foam to the top. Drink immediately. . For an iced latte use the same ingredients and follow these instructions instead: 1.Whisk matcha powder with boiling water to make a paste. Let cool slightly. Stir in vanilla and 1-2 tablespoons of the Milked Almonds. The mixture should be pour-able. 2.Fill a tall glass with crushed ice and add the matcha mixture. Fill the glass to the top with remaining Milked Almonds. 3.Drink immediately. ⠀ #latte #plantbased #almondmilk

When we were testing the recipes for THRIVE: A 7-DAY RESET, one of our recipe testers said this was better than any Asian restaurant—a compliment we don’t take lightly. The sauce is absolutely IRRESISTIBLE. It’s full of bright colors and flavors for a satisfying veggie meal. 🍃  Almond Butter and Veggie Zoodles / serves one  INGREDIENTS 1 tablespoon avocado oil or melted coconut oil 2 tablespoons green onions (sliced diagonally into ½” pieces) ½ cup broccoli (cut into small florets) ¼ cup red bell pepper (sliced) ½ cup carrots (thinly sliced) 1 medium zucchini (spiralized) Red pepper flakes (for sprinkling) OPTIONAL: Sesame seeds (for sprinkling) . FOR SAUCE 2 tablespoons canned full-fat coconut milk 2 tablespoons almond butter 1 tablespoon tamari 1 teaspoon maple syrup 1 teaspoon fresh ginger (finely grated) 1 teaspoon chili paste (such as sambal oelek (or pinch red pepper flakes)) 1 clove garlic (finely minced)  INSTRUCTIONS 1.Whisk sauce ingredients together in a medium bowl and set aside.  2. Heat oil in large pan. Add the green onions and sauté for 1-2 minutes, then add broccoli, carrots, and red bell pepper. Lower heat, if needed. Cook until vegetables are bright in color, and just barely tender.  3. Toss gently to coat the veggies with the sauce. Let simmer to thicken the sauce.  4. Remove from heat and serve immediately on top of the zoodles. Garnish with red pepper flakes and sesame seeds, if desired. #plantbased #mealplans
