From @yijunjunn: Roti jala is a Malaysian bread that, unlike most breads, doesn’t require any leavening and proofing, and can be whipped up in a matter of minutes 💁‍♀️, using little more than pantry staples. In fact, its name—literally meaning “net bread” in the Malay language—is a bit of a misnomer, because roti jala is really more like a crepe. But unlike a crepe, there’s no need to swirl the pan around and patch up the gaps in between. No matter where in the world Anthony Bourdain went, it always felt like he took us with him. As a chef, writer, journalist, and television host, he changed not only the face of food writing, but also the way we travel. His work is poignant, funny, enlightening, and yet so familiar, embracing the common threads among people, despite our superficial differences. Our team and community are honoring his legacy on #BourdainDay today, what would have been his birthday, as someone who inspired us to be a little more curious, empathetic, and intrepid. Our Assistant Editor, @you_feta_believe_it, even drove the #AnthonyBourdainFoodTrail and fell in love with New Jersey, Bourdain's home state, along the way. Award-winning New York chef @missyarobbins and Caesar salad go way back. Not only is it one of her favorite things in the world to eat, but it was also the first thing she learned to make in her very first restaurant job. (And then had to make daily five-gallon buckets of it!) One problem: the creamy dressing is not the healthiest. As an alternative, she discovered that using yogurt instead of oil and eggs still allows for those garlicky, anchovy flavors we love, but doesn't offend a healthy diet (well, not too much 😉).
